My blog of the week

Hi everyone,
How about your weekend? Mine was a bit calm and bored than usual because I'm pregnant of my fourth baby and I'm resting in bed since last monday. I'm happy for we're going to increase the family but the rest it's not being easy for me. It's too much work I leave to my parents and husbands with three kids at home and taking care of me too. Thanks mum and dad for your infinite patience, I don't know what I would do without you. Thank you Jaime for... everything.
Anyway, it's Monday and it's time for the blog of the week. This time I've chosen a blog quite difficult to define. It's a blog of travels that look for design or a blog of design that look for it on the travels Pauline Egge, the author, makes. The blog's called Petite Passport and there, Pauline, wants "to collect all the nicest (design) places on earth. To get you, and myself, motivated to travel the word!".
Enjoy it!!!

Fort made of newspaper

Hi everyone,
For this weekend it can be fun to make a fort at home. My kids really love building forts but they use towels and clothespins and it's a bit confusing because when they move all the towels fall down and it becomes a mess. But I've discoverd at Modern Parents Messy Kids a good way to make a fort with newspaper. I hope you enjoy it.

The little corner

spicy buttered popcorn

Makes: 8 cups
Preparation time: 10 minutes
Cooking time: 35 minutes
You will need
1.75l popped popcorn
180g firmly packed brown sugar
115g butter
2 tbsp corn syrup
1/2 tsp fine sea salt
3 tbsp puréed chipotle peppers in adobo sauce
1/2 tsp baking soda
Method
1. Preheat the oven to 120°C/gas mark 1/4. Line a rimmed baking sheet with parchment paper and spread the popcorn on the paper. Set aside.
2. Combine the sugar, butter, corn syrup, and salt in a saucepan and place over medium-low heat. Stir until the butter and sugar melt and the mixture comes to a boil. Stop stirring and boil until it reaches 120°C/gas mark 1/4 on a kitchen thermometer. Remove the pan from the heat and stir in the chipotle peppers and baking soda.
3. Pour the mixture over the popcorn, and stir with a spatula until the popcorn is evenly coated. Bake the popcorn for 35 minutes, stirring two or three times. Let cool and store in an airtight container

 lobster club salad

Serves: 4
Preparation time: 10 minutes
Cooking time: 10 minutes
You will need
8 slices duck or turkey bacon (or whatever kind of bacon you love)
3 heads baby gem lettuce, 2 hearts romaine or 2 heads round lettuce, roughly torn
1 avocado, peeled, stoned, and diced
1.15kg cooked lobster meat (1 medium lobster or 2 lobster tails should do), finely chopped
225g cherry tomatoes, halved
125ml vinaigrette
Method
1. Cook the bacon in a frying pan until crispy. Drain on kitchen paper, cut off and discard the fat if desired, and dice the crispy meat.
2. Arrange the lettuce on a dish. Nicely arrange the avocado, bacon, lobster and tomatoes on top (you can do this in rows or in an artful scatter). Drizzle the vinaigrette over the salad.

pork and apple burgers

Serves: 4
Preparation time: 10 minutes
Cooking time: 15 minutes
You will need
600g minced pork
1 small onion, grated
1 small apple, grated
2 garlic cloves, minced
1 tsp ground cumin
1 tsp freshly ground black pepper
1 tsp salt
2 tbsp groundnut oil
4 burger buns, mayonnaise or ketchup and a few lettuce leaves for serving (optional)
Method
1.Mix together the first seven ingredients. Break off a walnut-sized piece of the mixture and fry it in a little of the oil. Taste and adjust seasoning if necessary.
2. Form the rest of the mixture into four patties. Warm the rest of the oil in a large frying pan over a medium-high heat and fry the patties, until cooked through and lightly browned on the outside – around five to six minutes per side.
3.If you’re serving the burgers on buns, lightly toast the buns, spread them with a little mayonnaise and divide the lettuce between each one. Place the burger on top and sandwich together with the top part of the bun.

baked vanilla cheesecake

Serves: 10
Preparation time: 10 minutes plus chilling time
Cooking time: 55 minutes
You will need
12 reduced fat digestive biscuits
6 level tbsp low fat spread
500g quark (alternatively use low fat cream cheese)
3 large eggs
1 tsp ground cinnamon
2 tsp vanilla essence
8-10 tbsp sweetener
Finely grated zest of 1 orange and 1 lemon
Fresh mixed berries, to serve
1 level tsp icing sugar, to dust
Method
1. Place the biscuits in a polythene bag, finely crush with a rolling pin and place in a bowl. Melt the low fat spread, add to the biscuits and stir to mix well.
2. Spoon into a small non-stick spring-form cake tin (about 20 centimetres in diameter), pressing down firmly to make a smooth and even base. Chill in the fridge, preferably overnight.
3. Preheat the oven to 160°C/gas mark 3. Beat together the quark, eggs, cinnamon, vanilla essence, sweetener and the citrus zest until well combined and pour over the prepared biscuit base. Place in the oven and cook for around 55 minutes or until set and golden.
4. Remove from the oven and allow to cool completely. Cover with cling film and chill in the fridge for around eight hours. Top the cheesecake with the mixed berries and dust with icing sugar.

Blog of the week

Madrid in Love

I've discovered a shop in Madrid I have to visit as soon as possible!! It's called Madrid in Love and it seems to be a really interesting furniture shop. It's placed at Fernando VI, 10, in Madrid and during the month of June they celebrate a Pop-Up Store in collaboration with Magasand Restaurant. I don't know exactly what it's about but I think they place some of their furniture at Magasand's and you can enjoy their fast and good food while you enjoy some good furniture. I hope I will explain it better on Monday.

I've just discover in a swedish web a house in Malmö, Sweden, that I've really felt in love with. I really like the white walls, the little details with different paintings here and there, a yellow chair between the white furniture of the kitchen, a little wooden lamp, the terrace with all the colorfull cushions... I adore it.

¿Me recomendáis otra?
